Know Your Veggies: Dino Kale

How well do you know your veggies? In this week's Know Your Veggies we explore one of our Good Apple favorites: Dino Kale! Learn about what Dino Kale is, how you can use it, and how you can store it to last! We've also included a few of our favorite recipes for you to enjoy!

What is Dino Kale?

Dino kale, also known as “lacinato” or “Tuscan” kale, is an Italian heirloom variety of kale that dates back to the 18th century. Though it is considered a winter green, in Texas, dino kale can be harvested for most of the year, from late fall to early summer. Dino kale is well known for its narrow, blue-green leaves which have a characteristically crinkled texture. It is slightly milder and sweeter than its curly cousin, making it a great addition to almost any dish. 

How can I use it? 

Because of its mild, sweet flavor, dino kale can be used in a wide variety of ways. Dino kale shines as a foundational green in fresh salads, adds great texture to soups and stews, and provides beautiful color to vitamin-packed smoothies, just to name a few of our favorite ways to use it!  


Dino kale should be kept dry and refrigerated in an open or perforated bag, ideally on a top shelf, for 3-5 days. 


You should wash your dino kale just prior to using it, as any moisture can cause dino kale to spoil faster. To wash, fill a large bowl with water and swish the loose leaves around. Allow any dirt to settle; lift the leaves from the bowl and rinse and drain the bowl. Repeat this process until leaves are clean. When clean, cut away the flavorful greens from the woody stems, and continue using leaves with your desired recipe. 

Pro Tip:

If using dino kale in a salad, be sure to massage the greens for a minimum of 5 minutes. To do this, place the leaves in a bowl, add a few glugs of olive oil and a pinch of salt, and gently knead the leaves, like you might do with bread dough. Massaging your kale will help to soften the leaves and release sugars within the leaves to help balance the natural bitterness of the greens.
